Ingredients

1 egg white
1 tablespoon cornstarch

1 lb boneless skinless chicken breast , cut in cubes
1/2 cup water
1/2 cup rice wine vinegar
1/4 cup soy sauce
2 tablespoons sake or 2 tablespoons white wine
salt , to taste
1 tablespoon cornstarch

1 onion , chopped
2 -3 garlic cloves , minced
1 tablespoon gingerroot , minced
1 can water chestnuts , chopped
Cu Liu Ji is a classic Chinese dish that originated in the Zhejiang province. Its tangy and savory taste is achieved by marinating the chicken in a mixture of vinegar and soy sauce. Instructions

1.In a bowl, whisk together egg white, cornstarch, and salt. Add in chicken cubes and mix until well coated. Let it sit for 10 minutes.

6.Add chopped water chestnuts and cook for another 2-3 minutes.
