3 beets , trimmed
1 package dried rice noodles
6 tablespoons sesame oil , divided
3 eggs , beaten
1 pound uncooked shrimp - peeled , deveined , and tails removed
1/2 head Chinese cabbage , shredded

Instructions

8.Add the cooked noodles, eggs, shrimp, and roasted beets to the pan with the vegetables. Pour the sauce over everything, and toss to combine.
9.Garnish with cilantro, chives, and a lime wedge. Serve hot.
