Ingredients

2 -3 lbs pork shoulder or 2 -3 lbs rump steak
4 -5 jalapeno peppers
2 tomatillos
2 garlic cloves , minced
1/2 large yellow onion , minced
3 tablespoons olive oil or 3 tablespoons vegetable oil
1/2 cup flour
1 teaspoon ground cumin
salt & pepper

Instructions

1.Preheat oven to 325 degrees Fahrenheit
2.With a sharp knife, cut the pork or rump steak cubes into bite-size pieces.
3.Remove the jalapeno stems and chop roughly. Peel and cut the tomatillos into small pieces.
4.In a small dish, combine the minced garlic and onions.
5.Using a large skillet, add oil to heat over medium-high heat.
6.Add the pork or rump steak to the skillet, stirring to cook on all sides until browned.
7.Once browned, transfer cooked pork to an oven-safe dish.
8.Combine the jalapenos, tomatillos, garlic, onions, flour, cumin, salt and pepper to the pan, stirring until well combined. Cook for 5 minutes.
9.Pour the mixture over the pork in the oven-safe dish, mixing all ingredients until well combined.
10.Cover the dish with aluminum foil and bake for approximately 2 hours, ensuring that the meat is cooked through.
