4 baking potatoes , priked
2 tablespoons olive oil
2 packs boneless skinless salmon fillets
1 large egg
25 g butter , melted
150 g fresh whole wheat breadcrumbs
2 tablespoons sesame seeds

Instructions

1.Preheat your oven to 200°C/ fan 180°C/ gas 6.
2.Pricked baking potatoes and microwave on high for 10-12 minutes or until soft.
3.Meanwhile, mix olive oil and seasoning, then brush all over the salmon fillets.
4.Beat an egg and pour it onto a large plate.
5.Brush melted butter on another plate, then mix together breadcrumbs and sesame seeds in a third plate.
6.Cut salmon into fingers, then, dip each finger in egg, butter, and breadcrumb mix.
7.Bake the salmon fingers and peas on a baking tray for 15 minutes until the salmon is cooked through and the potatoes are crisp.
8.Serve with lemon wedges.
