Ingredients

1 1/2 cups blanched slivered almonds
6 large eggs
1 1/2 lbs well drained ricotta cheese
1/2 cup sugar
2 grated large oranges , zest of
1/4 cup orange liqueur
1 teaspoon pure vanilla extract
1/2 teaspoon ground nutmeg
3 large oranges , zest of
1 cup water
1 cup sugar
1/2 cup creme fraiche liquor
fresh mint leaves ( to garnish )
Crostata di Ricotta, Mandorla e Arancia is a traditional Italian dessert originating from the Abruzzo region of Italy. It is a tart-like pastry filled with creamy ricotta cheese and slivered almonds, flavored with orange zest, and nutmeg. The pastry shell is crispy on the outside, yet soft and creamy on the inside. Instructions

1.Preheat the oven to 350°F and grease a 9-inch springform pan.
2.Toast the slivered almonds on baking sheet for 8-10 minutes or until golden brown.
3.Let the almonds cool and then chop them finely.
4.In a large bowl, beat the eggs and sugar together until light and frothy.
5.Add the ricotta cheese, nutmeg, orange zest, and vanilla extract and mix again until well combined.
6.Stir in the chopped almonds and orange liqueur.
7.Pour the mixture into the prepared springform pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
8.While the Crostata is baking, make the orange syrup.
9.In a saucepan, combine the orange zest, sugar, and water.
10.Bring the mixture to a boil and then reduce the heat and simmer for 10 minutes.
11.Remove from heat and add the creme fraiche liquor.
12.Once the Crostata is done baking, let it cool completely before removing it from the pan and placing it on a serving plate.
13.Drizzle the orange syrup over the top of the Crostata and garnish with fresh mint leaves.
