Ingredients

1 1/2 lbs round steaks
1/4 cup stone ground mustard
6 slices bacon
2 onions , chopped
4 dill pickle spears , chopped
1/4 cup flour
3 tablespoons butter
1 package baby carrots
1 cup beef stock
1/2 cup sour cream
1 tablespoon flour

Instructions

1.Cut the round steaks into thin slices and tenderize them with a meat mallet until they are about 1/4 inch thick.
2.Spread mustard on each steak and then place a slice of bacon, some onion, and a piece of pickle on top.
3.Roll up each steak and secure it with a toothpick.
4.Dip each rolled steak in flour until coated.
5.In a large skillet, melt butter and then brown each rolled steak.
6.Transfer the browned steak rolls to a crockpot and add baby carrots and beef stock.
7.Cook on low for 8 hours.
8.Once cooking is complete, remove the steak rolls from the crockpot and set aside.
9.Combine sour cream and flour in a bowl and whisk until smooth.
10.Gradually add this mixture to the juices in the crockpot, while stirring constantly.
11.Let the mixture thicken for a few minutes to create a gravy.
12.Serve the steak rolls hot with the gravy poured over them.
