Ingredients

4 cups chopped cooked chicken
1 large chopped onion
1 large chopped green bell pepper
1 can cream of chicken soup
1 can cream of mushroom soup
1 can diced tomatoes , and green chiles ( Ro-Tel )
2 minced garlic cloves
2 teaspoons chili powder
12 fajita size corn tortillas
3 cups shredded sharp cheddar cheese

Instructions

2.Grease a 6 quart crockpot and spread 1/4 of the chicken mixture over the bottom.
3.Top the mixture with 4 corn tortillas, tearing to fit as necessary.
4.Add 1 cup of shredded cheese.
5.Repeat the layers of chicken mixture, tortillas, and cheese in the same order.
6.Cook on low heat for 4 to 5 hours until hot and bubbly.
7.Garnish with sliced olives (optional) and serve.
