1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme leaves
3/4 cup beef broth
1/4 cup tomato paste
1/4 cup red wine
2 garlic cloves , minced
1 lb red potatoes , cut into quarters
8 ounces assorted wild mushrooms , cut into quarters ( regular button mushrooms work too )
1 cup baby carrots ( cut in half )
fresh parsley ( to garnish )
