Ingredients

6 potatoes , thinly sliced
1 -2 1 -2 cup chicken stock or 1 -2 cup beef stock
1 cup swiss cheese ( optional ) or 1 cup gruyere cheese , shredded ( optional )

Instructions

1.Melt the butter in a skillet over medium heat.
2.Add the sliced onions and sauté until they are soft, then sprinkle with thyme, salt, and black pepper.
3.Stir to combine well and put the sautéed onions into the crockpot.
4.Add the sliced potatoes and pour stock over them. Please make sure the potatoes are barely covered with liquid.
5.Cover the crockpot and cook for 6 hours on the very low setting.
6.After 6 hours, if using, sprinkle shredded cheese on top of the potatoes and continue cooking for another 15-20 minutes until cheese is melted. Enjoy!
