Instructions

1.Combine corn, black beans, green chilies, onion, red bell pepper, and brown rice in a large slow cooker.
2.Stir together boiling water, orange juice concentrate, lime juice, cumin, chili powder, and salt in a small bowl. Pour mixture over ingredients in slow cooker.
3.Cover and cook on low heat for 6-8 hours or until rice is tender and most of the liquid has been absorbed.
4.Stir in cilantro just before serving.
