2 tablespoons fresh parsley , chopped

Instructions

1.In a small bowl, combine softened butter, herbes de provence, minced garlic, salt, and pepper. Mix well and rub all over the chicken thighs.

3.In a separate bowl, mix together the beef consomme, dry vermouth (or orange juice), Greek olives, and orange peel. Pour over the chicken.
4.Cover and cook on low for 6-8 hours, or on high for 4 hours.
5.Once cooked, remove the chicken from the crockpot and set aside. In a small bowl, mix together the cornstarch and cold water. Add to the liquid in the crockpot, along with dried basil and diced pimentos. Stir well.
