Ingredients

4 -5 lbs chicken ( or just thighs )
1 1/2 liters red wine ( Burgundy is best )
2 bay leaves
1 teaspoon dried thyme
2 garlic cloves
8 ounces bacon
olive oil or butter
10 frozen pearl onions
8 ounces button mushrooms
2 carrots
1 tablespoon tomato paste
2 tablespoons cornstarch
salt and pepper

Instructions

1.In a large skillet, cook bacon until crispy and set aside.
2.Brown the chicken in the bacon grease, then transfer to the crock pot.
3.Degrade the skillet with wine and pour the wine with remaining ingredients into the crock pot.
4.Cook on low for 6 - 8 hours.
5.When done, remove bay leaves and thyme stems and discard. Thicken the sauce by whisking cornstarch into 1/4 cup cold water and add into the sauce. Simmer for 10 minutes or until desired thickness.
6.Serve hot with crusty bread or over mashed potatoes or noodles.
