Ingredients

2 lbs potatoes , mashed . ( I like to use 2 bags of Ore-Ida easy mash in Garlic )
1 lb cubed cooked ham
1/2 of a head of cabbage
1 medium onion
2 leeks ( white part only )
1 cup half-and-half
1/2 cup butter
1 cup fresh parsley
salt and pepper
Crock Pot Colcannon is a traditional Irish dish that is made with mashed potatoes, cabbage, and ham. It is a hearty and filling meal that is perfect for cold winter nights. Instructions

1.Peel the potatoes and cut them into small pieces. Boil the potatoes until tender and then mash them. Set aside.
2.Shred the cabbage and chop the onion. Cut the leeks into thin slices.
3.In a pan, melt the butter and saute the onion and leek until softened. Add the ham and cook for a few more minutes.
4.Spray the crock pot with cooking spray and add in a layer of mashed potatoes. Top with a layer of the ham mixture, followed by a layer of cabbage. Repeat the layers until all the ingredients are used up. Add salt and pepper to taste.
5.Pour the half-and-half over the top of the mixture.
6.Cook on low for 6-8 hours or on high for 4 hours. Stir well before serving. Sprinkle with fresh parsley.
