Ingredients

5 boneless skinless chicken breasts
1 package fajita seasoning mix ( dry )
1 can fat free chicken broth , plus
3 cans water ( use empty can )
1 red pepper , chopped
1 green pepper , chopped
1 cup frozen corn
1 jar of mild cilantro salsa
2 garlic cloves , minced
1 bunch cilantro , chopped
1 can black beans , rinsed and drained
1 bay leaf

Instructions

1.Place chicken breasts in crockpot
2.Add fajita seasoning mix and stir to coat chicken
3.Add chicken broth, water, red pepper, green pepper, corn, salsa and garlic to the slow cooker, stirring to combine
4.Add bay leaf and cilantro to the slow cooker
5.Cover and cook on low for 6-8 hours or high for 3-4 hours
6.Remove chicken breasts from crockpot and using two forks, shred chicken into small pieces
7.Return chicken to the crockpot and add black beans to the soup, stirring to combine
8.Cook on low for an additional 30 minutes to an hour, until beans are heated through
