Ingredients

300 g beef
300 g horse meat
600 g onions
500 g potatoes
1 tablespoon lard
150 g pancetta ( dried , smoked )
15 g porcini mushrooms ( dried )
1 tablespoon paprika ( Hungarian , sweet )
1 tablespoon paprika ( Hungarian , hot )
1 cup wine ( white , dry )
1/2 teaspoon thyme ( dried )
1 bay leaf
10 g salt
8 g pepper
3 cups water
Croatian cobanac stew is a traditional dish that is often served during special occasions and celebrations. It originated from the rural regions of Croatia where shepherds and herdsmen would make this stew using whatever ingredients were available to them. The word cobanac comes from the Turkish word ‘coban’, which means shepherd. This hearty stew is perfect for chilly nights and can warm you up from the inside out. Instructions

1.Cut the beef and horse meat into small cubes and set aside.
2.Peel and chop the onions into small pieces.
3.Peel and dice the potatoes into small pieces.
4.In a large pot, heat the lard and add sliced pancetta, diced onions, dried porcini mushrooms, sweet paprika and hot paprika. Stir well and cook for 5 minutes on medium heat.
5.Add the cubed beef and horse meat, thyme, bay leaf, salt and pepper. Stir well and cook for another 10 minutes.
6.Pour the white wine and 3 cups of water into the pot. Add the diced potatoes and combine everything well.
7.Reduce heat, cover the pot with a lid and simmer for at least 2 hours. Stir occasionally to prevent sticking.
8.After 2 hours, check if the meat and vegetables are tender and cooked enough.
9.Serve warm and enjoy!
