Ingredients

1 can of quality tuna
1 tablespoon mayonnaise
2 eggs
2 slices of good quality bread ( crumbled )
1 can green chilies or 4 ounces anaheim chilies
2 pickled jalapeno peppers , chopped ( optional )
1 tablespoon finely chopped walnuts ( optional )
3 tablespoons chopped fresh cilantro
1/2 - 1 teaspoon lime juice
1/2 teaspoon dried chives
1 small fresh green onion , chopped
1 small garlic clove , chopped
1 pinch cumin
1 pinch salt and pepper
2 tablespoons butter
1 tablespoon mayonnaise
1/2 cup of any salsa
2 -3 tablespoons seafood cocktail sauce
1/2 - 3/4 teaspoon any hot sauce
1 pickled jalapeno pepper , finely chopped
1 teaspoon jalapeno juice , from jar ( optional )

Instructions

1.Drain the can of tuna and add it to a mixing bowl. Flake the tuna into small pieces with a fork.
2.Add the mayonnaise, eggs, crumbled bread, green chilies, pickled jalapenos, chopped walnuts, cilantro, lime juice, dried chives, green onion, garlic, cumin, salt, and pepper to the bowl. Mix all the ingredients well.
3.Use your hands to shape handfuls of the mixture into burger-sized cakes, flattening them slightly as you go.
4.Melt butter in a frying pan over medium heat. Add the tuna cakes to the pan and cook for 4-5 minutes per side until they are golden brown and crispy on the outside.
5.While the tuna cakes are cooking, prepare the sauce by mixing together mayonnaise, salsa, cocktail sauce, hot sauce, chopped jalapeno, and jalapeno juice.
6.Serve the tuna cakes hot with the sauce on the side.
