Instructions

1.Using a food processor, pulse shrimp until finely chopped.
2.In a mixing bowl combine shrimp, egg whites, minced fatty bacon, tapioca starch, salt, white pepper, and rice wine. Stir to combine.
3.Use a spoon to create small balls of mixture and shape them into a croquette shape.
4.Heat peanut oil in a frying pan over medium heat and add Szechuan peppercorns and fresh ginger. Fry until fragrant.
