2 cups four cheese italian blend shredded cheese , divided
1 jar prepared roasted garlic alfredo sauce , divided
1 cup finely chopped red bell pepper , drained on paper towels , divided
4 slices crispy bacon , crumbled plus two crispy strips crumbled for garnish
6 tablespoons butter , divided
1 shallot , minced
1/2 teaspoon minced garlic
2 tablespoons all-purpose flour
1 package frozen spinach ( thawed , drained and chopped )
1 cup prepared roasted garlic alfredo sauce
3/4 cup chicken broth , divided
1 pinch of grated nutmeg
sea salt and black pepper
4 center cut skinless salmon fillets

Looking for a creative new way to cook salmon? This crispy potato-crusted salmon dish offers a delicious twist on traditional pan-seared salmon fillets. The salmon is seasoned with salt and pepper, topped with roasted garlic alfredo sauce and then covered in mashed potato mixture mixed with red bell pepper and bacon to create a crispy crust. The salmon is then baked in the oven until cooked to perfection. The dish is served over a bed of garlic creamed spinach, which adds a healthy and flavorful twist. Instructions

1.Preheat oven to 400°F (200°C).
2.Mix mashed potatoes, 1 cup of shredded cheese, 1/2 jar of roasted garlic alfredo sauce, 1/2 cup chopped red bell pepper and 4 crumbled bacon strips together in a bowl.
3.Melt 3 tablespoons of butter in a skillet. Saute shallot and garlic until tender. Add flour and stir until combined. Gradually add spinach and remaining alfredo sauce. Pour in 1/2 cup of chicken broth, stirring continuously. Add nutmeg and salt and pepper to taste, stirring occasionally until heated through.
4.Season salmon fillets with salt and pepper. Spread remaining 1/2 jar of roasted garlic alfredo sauce on top of fillets. Place mashed potato mixture over sauce, covering each fillet.
5.Melt 3 tablespoons of butter in the skillet. Place salmon fillets, potato-side down, into the skillet. Cook for 2-3 minutes or until bottom is golden brown. Flip the fillets, and transfer the pan to the oven. Bake for 8-10 minutes or until salmon is cooked to desired doneness.
6.While the salmon is baking, warm remaining chicken broth, remaining 1 cup of shredded cheese and heavy cream in a small saucepan over low heat until heated through. Serve baked salmon fillets over garlic creamed spinach and pour cheese sauce on top. Garnish with remaining crumbled bacon and red bell pepper.
