Ingredients

3 -5 lbs pork legs ( front or hind including the knuckles )
1 bottle Sprite ( or 7-UP )
1 1/2 cups water
1 tablespoon salt
1/2 teaspoon baking soda
2 tablespoons fish sauce ( patis )
2 tablespoons flour
1 teaspoon msg ( optional )
oil , for deep-frying
2 -3 cups water ( or enough to cover the pata for boiling )
3/4 cup vinegar
1/4 cup soy sauce
1 medium onion , diced
2 garlic cloves , crushed and chopped
1 small red chili pepper , chopped
salt and pepper
Crispy Pata is a popular Filipino dish made from deep-fried pork leg or knuckles. The dish is often served with soy or vinegar dipping sauce, and sometimes with a side dish of pickled vegetables. Instructions

1.In a pot, bring pork legs, soda, salt, fish sauce and water to a boil for 10-15 minutes.
2.Discard the water and let the legs cool down.
3.Generously coat the legs with flour and MSG.
4.Heat the oil in a deep fryer or large pot to 350°F.
5.Fry the pork legs for about 10-15 minutes or until crispy and golden brown.
6.In another pot, combine 2-3 cups of water, soy sauce, vinegar, onion, garlic, red chili pepper, salt, and pepper, and simmer for 10 minutes.
7.Serve Crispy Pata hot with the dipping sauce.
