Ingredients

6 eggs
250 g asparagus
25 g butter
1/2 lemon , juice of
8 slices parma ham , about 85g
salt & freshly ground black pepper

Instructions

1.Boil the eggs for 6 minutes, then put them in cold water to cool. Peel and set aside.
2.Trim the asparagus, discarding the woody ends, then cook in boiling salted water for 2-3 minutes until tender. Drain well, toss with the butter and lemon juice. Set aside
3.Heat a non-stick frying pan. Fry the ham for 1-2 minutes on each side until crisp.
4.Divide the asparagus between two plates. Top each with four slices of the crispy Parma ham and 3 halved boiled eggs. Season with black pepper to taste.
