Ingredients

6 boneless skinless chicken breast halves ( about 3 pounds , please note I substituted boneless , skinless , trimmed chicken thighs )
kosher salt & freshly ground black pepper
1 head roasted garlic
18 slices pancetta ( pancetta is pork belly that has been cured with spices & salt for several months . )
16 large sage leaves
4 tablespoons olive oil , plus more for drizzling
1/2 cup dry white wine
1 cup chicken stock

Instructions

1.Preheat the oven to 375°F.

8.Remove the chicken from the oven and allow it to rest while you prepare the pan sauce.
9.Place the baking sheet on the stovetop over medium heat and add the white wine to deglaze the pan.
10.Add the chicken stock and simmer until the sauce has reduced by half and is thick and glossy.
11.Serve the chicken with the pan sauce spooned over the top.
