Ingredients

2 teaspoons canola oil
1/2 cup thinly sliced green onion
3 garlic cloves , minced
1 can pinto beans , rinsed and drained
1 cup frozen whole kernel corn , thawed
1 cup cooked brown rice
1 cup chopped seeded tomatoes
3 3 ounces queso fresco or 3 ounces reduced fat monterry cheddar cheese ( 3/4 cup )
1 - 1 1/2 teaspoon chipotle chile in adobo
12 sheets frozen phyllo pastry sheets , thawed
1/3 cup light sour cream

Instructions

1.Preheat oven to 400°F.
2.Heat oil in a skillet over medium-high heat and add green onions and garlic. Cook for 3 minutes.
3.Add pinto beans, corn, cooked rice, and chopped tomatoes, stir together and cook for 5 minutes.
4.Remove from the heat and add queso fresco or cheddar cheese, chipotle chilli and mix.
5.Take one sheet of phyllo pastry and place it vertically in front of you on a clean surface.
6.Brush with oil and place another sheet on top, brush with oil again. Continue layering until you have 3 sheets on top of each other.
7.Spoon 1/4 cup of the bean mixture into the middle of the pastry. Fold the sides of the pastry over the filling and roll it up tightly to form a burrito.
8.Brush the rolled burritos with oil and place them on a greased baking sheet.
9.Bake for 15-20 minutes, or until the pastry is golden brown.
10.Serve with sour cream on top and enjoy!
