Ingredients

4 boneless skinless chicken breasts
8 tablespoons shredded monterey jack pepper cheese
16 ounces plain tortilla chips ( crushed fine in the food processor )
2/3 cup flour
3/4 cup salsa , use your favorite , but a smooth salsa , not the chunky kind , a picante sauce also works
2 eggs , well beaten
olive oil ( to saute the chicken )
salt

2 avocados , rough chopped
2 tablespoons fresh jalapenos , fine diced ribs and seeds removed
1 cup sour cream ( do n't use low fat )
1/4 cup milk ( more if you prefer the sauce a bit thinner )
1/3 lime juice
2 tablespoons fresh cilantro , fine chopped

Instructions

1.Place the crushed tortilla chips on a plate.
2.Place the flour on a separate plate. Mix in salt and pepper to taste.

4.Coat each chicken breast in flour, shaking off any excess flour. Then dip in the eggs, and then coat in crushed tortilla chips, pressing the chips onto the chicken to adhere.
5.Heat olive oil in a skillet over medium-high heat. When oil is hot, add the chicken and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
6.For the avocado jalapeno sauce, mix the chopped avocado, jalapenos, sour cream, milk, lime juice, cilantro, salt, and pepper to taste in a bowl until well combined. Serve alongside the chicken as a dipping sauce.
