Ingredients

1 cup brown sugar
1/2 cup water
1/2 cup white wine vinegar
2 garlic cloves , peeled and left whole
2 fresh lime leaves or 1 teaspoon grated lime zest
1/2 cup light soy sauce
18 ounces boneless salmon fillets , with skin on
12 pieces pickled ginger
6 stalks lemongrass or 6 wooden skewers
2 teaspoons vegetable oil
2 teaspoons sesame oil
6 cups shredded savoy cabbage
1/2 teaspoon chili flakes
1/3 cup raisins
2 tablespoons hoisin sauce
2 tablespoons balsamic vinegar
1/2 cup baby beet leaves or 1/2 cup bean sprouts
Crisp Skinned Salmon Skewers are a perfect healthy meal for seafood lovers. This recipe is easy to make and requires only a few ingredients, making it perfect for busy weeknights or a weekend dinner. The salmon is marinated in a sweet and savory sauce that infuses flavor into the fish. Skewered with lemongrass or pickled ginger, these salmon skewers are then grilled to perfection and served with a refreshing cabbage salad. Instructions

1.In a saucepan, combine brown sugar, water, white wine vinegar, garlic cloves, lime leaves and soy sauce. Simmer for 5 minutes then set aside to cool.
2.Cut the salmon fillets into 2-inch thick pieces and place them in a bowl. Pour the cooled sauce over the salmon, add the pickled ginger and let it marinate for 30 minutes.
3.If using lemongrass, cut the top and the bottom and peel the outer layer. Cut into 2-inch pieces and skewer the salmon and lemongrass alternately. If using wooden skewers, soak them in water for 30 minutes before assembling the skewers.
4.In a bowl, mix vegetable oil and sesame oil. Brush the skewers with the oil mixture.
5.Grill the skewers over medium heat for 3-4 minutes on each side, until the skin of the salmon is crispy and the flesh is cooked through.
6.In a large bowl, combine shredded savoy cabbage, chili flakes, raisins, hoisin sauce and balsamic vinegar. Toss well. Top with baby beet leaves or bean sprouts.
7.Serve the salmon skewers with the cabbage and enjoy!
