Ingredients

4 -6 large pomegranates , juice of or 2 cups storebought pomegranate juice
1/4 cup pomegranate arils ( from 1 large pomegranates )
2 tablespoons lemon juice
0.5 package powdered fruit pectin ( or 1 packet liquid fruit pectin )
4 cups granulated sugar

Instructions

1.Sterilize jars and lids by simmering them in a large stockpot of water for 10 minutes.
2.Juice the pomegranates in a large measuring cup, and add enough store-bought juice to make 2 cups of pomegranate juice.
3.In a large saucepan, combine the pomegranate juice, lemon juice, and pectin.
4.Bring to a boil over high heat, stirring constantly.
5.Add the sugar all at once and stir until dissolved.
6.Return to a rolling boil and boil hard for 1 minute, stirring constantly.
7.Remove from heat and stir for a few seconds to remove any remaining foam.
8.Carefully ladle jelly into hot sterilized jars, leaving 1/4 inch headspace.
9.Wipe rims and threads of jars clean with a damp paper towel and apply two-piece lids.
