Creton à Maman is a traditional French-Canadian dish that has been passed down through generations of Quebecois families. It is a mixture of ground pork, milk, and seasoning that is slowly cooked down to a thick paste and then chilled. The resulting spread can be used in a variety of ways, making it a staple of many Quebecois households.

Instructions

1.In a large saucepan, combine the ground pork with enough milk to cover and cook over medium heat until the meat is browned.
2.Add the onion and chives to the meat and stir to combine.
3.Season with salt and pepper to taste.
4.Reduce the heat to low, cover, and simmer for 2-3 hours, stirring occasionally and adding milk as needed to keep the meat from drying out.
5.Once the creton has cooked down to a thick paste, remove it from the heat and transfer it to a dish to cool. You can store it in the fridge for up to a week.
