Ingredients

3 cups flour

1 lb unsalted cheese ( cottage cheese , for example )
2 tablespoons mint
1 egg
5 tablespoons sugar
1 cup olive oil ( for frying )
Kalitsounia Kritis is a traditional Cretan pastry, commonly served as a dessert or snack. They are made with a simple dough, filled with a mixture of unsalted cheese, mint, egg and sugar. Instructions

1.In a large mixing bowl add the flour and a pinch of salt. Mix until well combined.
2.Add water, slowly stirring and mixing continuously until the dough is smooth and elastic.
3.Cover the dough and let it rest for a minimum of 1 hour.
4.In another mixing bowl add the unsalted cheese, mint, egg and sugar, mix until well combined.
5.Divide the dough into small pieces. Roll each piece into a thin sheet, then cut into small circles using a biscuit ring or any similar cutting tool.
6.Put a small amount of the cheese and mint mixture into the center of each circle.
7.Fold the sides over to cover the filling and seal the edges.
8.In a frying pan, heat up the olive oil. Fry each small pie until golden brown on both sides. Remove from the pan and place on a paper towel to absorb any excess oil.
