2 tablespoons unsalted butter

1/4 teaspoon ground nutmeg

Instructions

1.In a large bowl, sift together the flour and salt.
2.Create a well in the center of the flour and add eggs. Whisk the eggs while slowly incorporating the flour mixture until smooth.
3.Melt 1/4 cup of unsalted butter and stir into the batter. Slowly add the milk, whisking until the batter is smooth and free from lumps.
4.Cover the batter and rest for 30 minutes.
5.Peel and core the apples and slice into thin pieces. Over medium heat, melt 2 tablespoons of unsalted butter in a pan. Sauté the apple slices until they soften and turn slightly brown. Add the caster sugar, cinnamon, cardamom, nutmeg, and pistachio nuts. Stir and cook for another 5 minutes until everything is combined.
6.Heat a non-stick pan over medium heat and brush with the additional melted butter. Once hot, ladle the batter onto the pan, using just enough to create a thin layer. Cook until the underside is golden brown, then flip and cook the other side. Continue until all of the batter has been used up.
7.Serve the crêpes with the apple and pistachio mixture. Sprinkle with icing sugar and serve with cream or ice cream (optional).
