Ingredients

6 tablespoons flour
1 dash salt
3 eggs
1 cup milk ( more , if necessary )
1 tablespoon cognac ( or 1 TBS water )
1 1/2 ounces unsalted kerry irish gold unsalted butter , melted
Crepes are a quintessential French food, often sold by street vendors throughout Paris. These paper-thin pancakes can be eaten for breakfast, lunch, dinner, or dessert. In this recipe, we add a splash of cognac to give the crepes an extra layer of rich flavor.

Instructions

1.In a large bowl, sift together flour and salt.
2.In a separate bowl, whisk together eggs and milk until smooth.
3.Gradually pour egg mixture into flour mixture, whisking constantly until batter is smooth.
4.Stir in cognac and melted butter.
5.Heat a non-stick crepe pan or skillet over medium-high heat.
6.Pour 1/4 cup batter into the pan and swirl to coat the bottom evenly.
7.Cook until the edge of the crepe turns golden brown, then flip and cook until the other side is golden brown.
8.Repeat with remaining batter.
