3 navel oranges
1/2 cup all-purpose flour
4 tablespoons sugar
1/8 teaspoon salt
3/4 cup 1 % low-fat milk
2 large eggs
2 tablespoons orange-flavored liqueur , such as Grand Marnier
3 tablespoons light stick butter

Instructions

1.Grate 1 tablespoon zest from the oranges, being careful to avoid the white pith. Cut off the peel and white pith and discard. Working over a bowl, cut the orange segments from their surrounding membranes. Reserve the segments and their juice.
2.In a medium bowl, whisk together the flour, 2 tablespoons of the sugar, and the salt. Gradually whisk in the milk until smooth. Whisk in the eggs and liqueur until smooth.
3.In a medium nonstick skillet, melt the butter over medium heat. Pour in 2 tablespoons of the batter and cook until the crepe is set and golden brown on the bottom, about 2 minutes. Flip the crepe and cook until browned on the other side, about 1 minute longer. Transfer to a plate. Repeat with the remaining batter to make a total of 8 crepes.
4.In a large nonstick skillet, bring the orange zest and juice, remaining 2 tablespoons sugar, and 2 tablespoons water to a boil over medium-high heat. Add the orange segments and cook, turning once, until the liquid has thickened slightly, 3–4 minutes. Top each crepe with some of the orange mixture and serve.
