Instructions

1.In a large mixing bowl, whisk together flour, egg yolks, caster sugar, light beer, milk, and salt until smooth and there are no lumps. Cover and let the batter rest in the refrigerator for an hour.
2.In a saucepan, melt butter and add liquid sugar syrup, kirsch, cinnamon, caster sugar, sour cherries, and their juice, and cook until the cherries soften and the mixture thickens into a caramel sauce. Set aside.
3.Heat a crepe pan or a non-stick frying pan over medium heat. Grease the pan with a little butter and ladle enough batter to coat the bottom of the pan. Cook for a minute or two, then flip it over and cook for another minute or until the crepe edges are brown and crispy. Repeat until the batter is used up.
4.To assemble the crepes, spread some caramel sauce over each crepe and fold them into quarters. Serve immediately.
