1 lb boneless skinless chicken breast , cubed
1 package loop sausage beef polska kielbasa , sliced
1 green bell pepper , diced
1 yellow onion , chopped
3 large celery ribs , chopped
3 garlic cloves , minced
1 bunch scallion , chopped
1 can diced tomatoes , with juices
1 can chicken broth
1 1/4 cups long grain rice
1 tablespoon Worcestershire sauce
2 bay leaves
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried sage
1 teaspoon paprika
1 tablespoon tony chacere 's creole seasoning , no substitutes for Tony 's
1 teaspoon salt

Jambalaya is a classic Creole dish that originated in Louisiana. This recipe features tender cubes of chicken and sliced polska kielbasa sausage, combined with a flavorful mixture of diced vegetables, herbs, and spices. Fragrant and satisfying, it's perfect for a weeknight dinner or special occasion.

Instructions

1.In a large pot, sauté chicken cubes and sliced sausage until browned.
2.Add in diced bell pepper, chopped onion, minced garlic, chopped celery, and chopped scallions. Cook for a few minutes until vegetables have softened.
3.Add in diced tomatoes, chicken broth, rice, Worcestershire sauce, bay leaves, dried basil, dried oregano, dried sage, paprika, creole seasoning, salt, and black pepper. Stir until everything is well combined.
4.Bring mixture to a boil, then reduce heat to low and simmer for about 25 minutes or until rice is cooked through.
5.Remove bay leaves and serve warm.
