1 package dried black-eyed peas
1/2 lb lean ham , pieces or 1 meaty ham bone
3 cups water
1 medium onion , chopped
6 -8 green onions , chopped
1 cup chopped fresh parsley
1 medium green bell pepper , chopped
2 -3 garlic cloves , minced
1 - 1 1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 tablespoon cajun seasoning
1/4 teaspoon hot pepper sauce
1 tablespoon Worcestershire sauce
1 can tomato sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 lb smoked sausage , sliced ( andouille is best )
hot cooked rice
green onion , fans ( to garnish ) ( optional )

Instructions

1.Rinse and sort the black-eyed peas, removing any unwanted debris.
2.In a large crockpot, add the sorted black-eyed peas, ham/bone, water, chopped onions, chopped green onions, chopped parsley, chopped green bell pepper, minced garlic, salt, cayenne pepper, black pepper, cajun seasoning, hot pepper sauce, Worcestershire sauce, tomato sauce, oregano, and thyme. Mix well.
3.Cook on low heat for 8-10 hours, or on high heat for 4-6 hours.
4.30 mins before the dish is finished, add the sliced smoked sausage and continue to cook until the sausage is heated through.
5.Serve over hot cooked rice and garnish with chopped green onions if desired.
