Ingredients

6 cups water
1 tablespoon coarse salt
1 leek , roughly chopped
1 carrot , coarsely chopped
1 onion , coarsely chopped
1 stalk celery , coarsely chopped
1 lb chicken wings
1 teaspoon dried tarragon
1 bouquet garni ( parsley , thyme , bay leaf )
6 black peppercorns
1 clove
2 tablespoons butter
4 tablespoons flour
1 cup heavy cream
1 chicken breast
2 egg yolks
1/2 teaspoon tarragon , dried , for garnish
Creme De Volaille, or French Cream of Chicken Soup, is a popular dish in France, and for good reason. Instructions

1.In a large pot, bring 6 cups of water and 1 tablespoon of coarse salt to a boil.
2.Add in the leek, carrot, onion, celery, chicken wings, dried tarragon, bouquet garni, black peppercorns, and clove. Reduce heat to medium and let simmer for 1 hour.
3.Remove the chicken wings from the pot and set aside. Strain the remaining broth through a fine mesh sieve and set aside.
4.In the same pot, melt 2 tablespoons of butter over medium heat. Add in 4 tablespoons of flour and whisk until smooth. Cook for 2-3 minutes, stirring constantly.
5.Slowly pour in the reserved broth, whisking constantly to prevent lumps.
6.Add in the heavy cream and stir to combine. Let simmer for 10-15 minutes, stirring occasionally.
7.Meanwhile, shred the reserved chicken breast and set aside.
8.In a separate bowl, whisk together 2 egg yolks. Slowly pour in a ladleful of hot soup and whisk until well combined. Pour the egg mixture back into the pot and stir to combine.
9.Add in the shredded chicken and let simmer for an additional 5 minutes. Garnish with dried tarragon before serving.
