Ingredients

1 can full fat coconut milk
1/2 cup minus 2 tbs maple syrup or 1/4 cup Agave
4 tablespoons alcohol-free vanilla
1/2 cup rice milk ( or other milk substitute )
1 teaspoon guar gum ( the original recipe did n't call for this but I think it improves the consistency )
2 ripe bananas ( optional )
1/3 cup finely chopped cashews ( or other additions ) ( optional )
cinnamon , to sprinkle on top ( optional )
This Creamy Vanilla Coconut or Banana Ice Cream is the perfect dairy and soy-free dessert option. Made using only a handful of ingredients, this recipe can be customized with the addition of chopped cashews or ripe bananas. Enjoy this healthier treat option without sacrificing taste or texture.

Instructions

1.In a blender, blend the coconut milk, maple syrup or agave, alcohol-free vanilla, rice milk, and guar gum until smooth.
2.Pour the mixture into a container and refrigerate it for 2-3 hours, or until it is chilled.
3.Once chilled, add the chilled mixture back to the blender and blend well once again.
4.If you want to make banana ice cream, add chopped bananas to the blender and blend the mixture.
5.Pour the mixture into an ice cream maker and churn it according to the manufacturer's instructions.
6.When the ice cream is almost done, add in the chopped cashews if desired.
7.Store the finished ice cream in a tightly covered container in the freezer for up to 2 weeks.
