12 ounces rigatoni pasta

2 cups 2 % low-fat milk , divided
1 tablespoon butter
5 ounces finely shredded gruyere cheese
3 ounces brie cheese , rind removed ( soft-ripened )
1/2 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes ( or to taste )
fresh flat leaf parsley ( optional )

Instructions

1.Bring a large pot of water to a boil. Add 1 tbsp salt and the rigatoni pasta to the boiling water and cook until al dente according to the package instructions. Reserve 1/2 cup of the pasta water and then drain the pasta.
2.In a medium saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly for 1 - 2 minutes or until the mixture turns a light golden color.
3.While whisking constantly, gradually pour in 1 1/2 cups of the low-fat milk.
4.Continue cooking while whisking constantly until the sauce comes to a simmer and thickens. Reduce the heat to low and stir in the gruyere cheese and brie cheese until melted.
5.Stir in the remaining 1/2 cup milk, 1/2 teaspoon salt, black pepper, and crushed red pepper flakes.
