Ingredients

1 1/2 cups yellow onions , chopped coarse
1/2 cup white mushroom , chopped coarse
2 tablespoons garlic , chopped fine
2 ounces dried porcini mushrooms , chopped coarse , rinsed and soaked in water 10 minutes ( or cepe mushrooms )
5 fluid ounces olive oil , divided
4 teaspoons fresh basil , chopped fine or 1 teaspoon dried basil
1 teaspoon fresh oregano , chopped fine or 1/4 teaspoon dried oregano
2 quarts vegetable stock or 2 quarts chicken stock
12 ounces coarse polenta ( or yellow cornmeal-about 1 1/2 cups )
salt and pepper , to taste
2 cups heavy cream
4 ounces aged asiago cheese , grated fine ( or Fontine about 1/2 cup )
8 -10 fresh wild mushrooms ( portobella , shitake , chanterelle , oyster , etc . )
fresh basil sprig ( to garnish )

Instructions

1.In a large skillet, heat 3 fluid ounces of olive oil over medium heat.
2.Add onions, garlic, and white mushrooms, and cook until the onions are translucent, about 5 minutes.
3.Add the dried porcini mushrooms and their soaking liquid, basil, oregano, salt, and pepper, and reduce the heat to low. Cover and cook for 15-20 minutes.
4.Meanwhile, bring the vegetable or chicken stock to a boil in a large saucepan.
5.Gradually whisk in the polenta, then reduce the heat to low and continue cooking, stirring occasionally, for 20-25 minutes until thickened and tender.
6.Add heavy cream, asiago cheese, and 2 fluid ounces of olive oil, and cook for 5 more minutes.
7.Slice the wild mushrooms.
8.In a separate skillet, heat the remaining 3 fluid ounces of olive oil on medium heat, then add the sliced mushrooms. Cook for 10-15 minutes or until browned.
9.To serve, spoon the polenta into bowls and top with mushroom mixture. Garnish with basil sprigs.
