Ingredients

1 large tilapia fillet , filet cut into 1 inch pieces
3 tablespoons vegetable oil
1/2 teaspoon mustard seeds
1/2 a small onion , finely chopped
4 large garlic cloves
1/2 inch ginger
2 hot green chili peppers , whole
1/2 teaspoon turmeric ( optional )
2 1/2 tablespoons tomato paste
water , as necessary
salt and pepper
1/2 teaspoon cumin powder
3/4 teaspoon coriander powder
1/4 teaspoon garam masala
1 teaspoon white vinegar ( I used red wine vinegar )
2 -3 tablespoons coconut cream
coriander leaves ( to garnish )

Instructions

1.In a large non-stick pan over medium heat, add 3 tablespoons of vegetable oil and let it heat up. Add 1/2 teaspoon mustard seeds and let them sputter.
2.Add 1/2 a small onion, finely chopped, and stir for 3-4 minutes or until the onions are translucent.
3.Add 4 large garlic cloves, 1/2 inch ginger, and 2 hot green chili peppers, whole. Stir until the onions start to turn brown.
4.Add 1/2 teaspoon turmeric (optional) and 2 1/2 tablespoons tomato paste. Cook for 2 minutes and add water as necessary.
5.Add salt, pepper, and 1/2 teaspoon cumin powder. Cook for 5 minutes.
6.Add 3/4 teaspoon coriander powder, 1/4 teaspoon garam masala, 1 teaspoon white vinegar (or red wine vinegar), and the tilapia fillet cut into 1 inch pieces. Mix and cook for 7-8 minutes.
7.Add 2-3 tablespoons coconut cream and cook for 2 minutes.
8.Garnish with coriander leaves and serve hot with rice or bread.
