2 pounds potatoes , peeled and cubed

1/4 bunch fresh parsley , chopped
1 cup half-and-half
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
4 tomatoes , seeded and chopped
4 hot dogs , sliced ( optional )

Instructions

4.Reduce the heat and simmer for 20-25 minutes until the potatoes are fully cooked.
5.Remove from heat and use an immersion blender to purée the soup until smooth.
6.Stir in the chopped parsley, half-and-half, salt, pepper, and cumin.
7.Add the chopped tomatoes and hot dogs, if desired. Heat the soup for an additional 5-7 minutes before serving.
