Ingredients

225 g assorted mushrooms , such as oyster , horse , shiitake , trimmed and quartered
675 g cod or 675 g haddock fillets , skinned and diced
600 ml milk , low-fat is fine , boiling
900 g floury potatoes , peeled and quartered
25 g unsalted butter
150 ml milk , low-fat is fine
salt , to taste
fresh ground black pepper , to taste
grated nutmeg , to taste
50 g unsalted butter
1 medium onion , chopped
1/2 celery rib , chopped
50 g plain flour
10 ml lemon juice
2 tablespoons fresh parsley , chopped

Instructions

1.Preheat the oven to 200C/fan180C/gas 6.
2.Place the mushrooms and fish in a large baking dish and season with salt and freshly ground black pepper.
3.Pour the boiling milk over the top and bake in the oven for 10-12 minutes, or until the fish is cooked through and the mushrooms are tender.
4.Meanwhile, bring a large pan of salted water to the boil. Add the potatoes and cook for 15-20 minutes, or until tender.
5.Drain and mash together with the butter and milk. Season with salt, freshly ground black pepper and grated nutmeg.
6.Melt the butter in a pan over a medium heat. Add the onion and celery and fry until soft and golden-brown, about 10 minutes.
7.Stir in the flour and cook for a further minute. Gradually pour in the milk from the baking dish, stirring constantly, until the sauce is thick and smooth.
8.Remove from the heat and stir in the lemon juice and chopped parsley.
9.Spoon the mushroom and fish mixture into individual pie dishes. Spoon over the sauce. Top with the mashed potato.
10.Bake in the oven for 20-25 minutes, or until golden-brown.
