Ingredients

2 -4 tablespoons oil
2 lbs pork shoulder , cut into about 2-inch cubes
2 tablespoons curry powder ( can use a little more if desired )
3 -4 large carrots , halved lengthwise and cut into about 1-inch half-moons
1 big onion , chopped
fresh garlic ( optional )
1 can coconut milk
1 can chicken broth , undiluted
1/2 cup water
salt
pepper ( optional )
1 can chickpeas , drained and rinsed
1 box uncooked basmati rice or 2 cups uncooked white rice
1 box frozen spinach , drained ( optional )
Creamy Curry Pork and Rice Bake is a hearty and flavorful one-pot meal that's perfect for a cozy evening in or a dinner party with friends. The pork is browned and simmered in a spiced coconut milk sauce with sweet carrots and earthy chickpeas. Rice is cooked alongside the other ingredients to form a filling and comforting meal in just one pot. The spinach adds a pop of color and nutrition to the dish, making it a balanced and satisfying dinner option.

Instructions

1.Preheat the oven to 350°F.
2.In a large oven-safe pot or Dutch oven, heat 2-4 tablespoons of oil over medium-high heat.
3.Add the cubed pork and brown on all sides, then add in the curry powder and stir well to coat the meat.
4.Add the halved carrots, chopped onion, and garlic (if using) to the pot. Stir to combine.
5.Pour the can of coconut milk, undiluted chicken broth, and 1/2 cup of water into the pot. Stir well and season with salt and pepper (if desired).
6.Add the drained and rinsed chickpeas to the pot and stir well.
7.Pour the uncooked basmati rice or white rice on top of the other ingredients and spread it out evenly.
8.Cover the pot with a tight-fitting lid and transfer it to the preheated oven.
9.Bake for 45-50 minutes, or until the rice is cooked through and the pork is tender.
10.Remove the pot from the oven and stir in the drained frozen spinach (if using). Let it sit for a few minutes to thicken before serving.
