Instructions

1.In a large pot, melt the butter over medium heat. Add the leek, carrot and celery, and sauté until tender.

3.Cook for 2-3 minutes, stirring constantly.
4.Add the brandy and cook for 2-3 minutes, until the mixture thickens.
5.Slowly whisk in 3 cups of fish stock, diced tomatoes and half of the crawfish tails, then bring to a simmer for 10-15 minutes.
6.Remove from the heat and discard the bay leaf.
7.Puree the mixture using an immersion blender or transfer to a regular blender in batches, and blend until smooth.
8.Return the pureed mixture to the pot and stir in the heavy cream.
9.Add the remaining fish stock, the remaining crawfish tails, salt, white pepper and paprika, and cook over medium heat for 5-10 minutes, until the crawfish are cooked through and the soup is hot.
