Ingredients

2 lbs potatoes
1 savoy cabbage , shredded
4 ounces butter
1 bunch spring onion , chopped ( see note below )
7 ounces milk
salt and pepper
nutmeg
Colcannon is a traditional Irish dish that is enjoyed on special occasions, such as Saint Patrick’s Day. The dish is made by combining mashed potatoes, cooked cabbage, and other ingredients such as milk, butter, and onions. The name ‘Colcannon’ is derived from the Irish words ‘cal ceannann’ which translates to ‘white-headed cabbage’. The dish was originally made with kale, but over time, cabbage became the more common vegetable used in the recipe. Colcannon is usually served as a side dish to fish, meat, or poultry, and is often accompanied by a pint of Irish beer.

Instructions

1.Peel and chop the potatoes into small pieces. Boil them in a large pot with salted water for 20 minutes, or until tender.
2.While the potatoes are boiling, cook the shredded cabbage in a large saucepan filled with boiling salted water. Cook for 4-5 minutes, or until tender. Drain the cabbage and set aside.
3.In a separate saucepan, melt the butter over medium heat. Add the chopped spring onions and cook until soft, but not brown.
4.Add the milk to the onions and stir to combine. Keep the saucepan on low heat and continue to cook until the milk is heated through.
5.Drain the potatoes and return them to the pot. Add the cabbage, onion/milk mixture, salt, pepper, and nutmeg to the pot with the potatoes. Mash together until all ingredients are well combined and the dish is smooth and creamy.
