Creamy Cheddar Beef Enchiladas are a classic Mexican dish that combines ground beef, refried beans, and cheese rolled up in a tortilla and smothered in enchilada sauce. Instructions

1.Preheat the oven to 375°F.
2.In a medium saucepan, combine the white rice and 1 1/2 cups of water. Bring to a boil, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
3.In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess grease.
4.Add the onion, garlic, taco seasoning, and 1 cup of water to the skillet with the beef. Simmer for 10-12 minutes, or until the onions are tender and the liquid has been reduced by half.
5.In a mixing bowl, combine the refried beans, cottage cheese, and 1 cup of shredded Cheddar cheese.
6.Starting at one end of each tortilla, spoon about 1/4-1/3 cup of the beef mixture onto the tortilla, followed by a spoonful of the bean mixture. Roll the tortilla around the filling and place it in a 9x13 inch baking dish, seam side down. Repeat with the remaining tortillas and filling.
7.Pour the enchilada sauce over the top of the rolled tortillas and spread it evenly to cover them completely. Sprinkle the remaining shredded Cheddar cheese on top of the sauce.
8.Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
9.Serve hot with a dollop of sour cream on top.
