1 onion , sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour

2 cups milk

Instructions

1.Preheat oven to 400 degrees F (200 degrees C). Grease a 1-quart casserole dish.
2.Layer half the potatoes, then half the onion in prepared casserole dish. Season with salt and pepper.
3.In a medium-size saucepan, melt butter over medium heat. Mix in flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook for 5 minutes, stirring constantly, until sauce thickens. Add shredded cheese and stir until melted.
4.Pour half the cheese sauce over the potato mixture. Repeat with remaining potatoes, onion, and sauce.
5.Cover, and bake for 1 1/2 hours. Remove cover and bake for an additional 30 minutes, or until potatoes are tender and the top is browned.
