Ingredients

10 ounces frozen spinach , thawed , wrapped in paper towel to dry
16 ounces heavy cream
1 lemon , juice of
salt
1/2 white onion , diced
2 cups butter
egg
8 English muffins
8 slices Canadian bacon
1/8 cup white vinegar
1 teaspoon cayenne pepper
1/4 cup water
Creamed Spinach Eggs Benedict is a spin-off from the classic Eggs Benedict dish. The dish became popular in America in the 1940s and has been a breakfast favourite ever since. The dish is served on toasted English muffins, topped with Canadian bacon, poached eggs, and hollandaise sauce. The hollandaise sauce is replaced with the creamy spinach mixture in this recipe. The dish is rich and creamy and is perfect for a weekend breakfast or brunch with family and friends. The dish can be served with roasted potatoes or crispy bacon for a fuller meal.

Instructions

1.In a saucepan, pour heavy cream and water and bring to a boil over medium heat.
2.Add onion, 1 teaspoon salt, and cayenne pepper. Stir well.
3.Add spinach and lemon juice into the pan and stir well.
4.Reduce heat to low-medium and let it simmer for 25 minutes or until the spinach is cooked.
5.In a large skillet, melt butter over medium heat.
6.Toast English muffins until they are golden brown.
7.Fry Canadian bacon slices for 2-3 minutes on each side until they turn crispy.
8.In a large saucepan, pour water, white vinegar and 1/2 teaspoon salt and bring it to a simmer.
9.Crack an egg into a bowl.
10.Create a whirlpool in the saucepan and pour the egg into the water.
11.Let the egg poach for 2 minutes.
12.Take a slotted spoon and remove the egg from the water.
13.Repeat for the other 7 eggs.
14.To assemble, place the toasted muffin onto a plate, then add the Canadian bacon slice and spinach mixture.
15.Place a poached egg on top.
16.Top it with spoonfuls of hollandaise sauce from the spinach mixture saucepan.
17.Sprinkle black pepper over the top.
