Ingredients

40 g unsalted butter
6 leeks , white and pale green parts only , thoroughly washed , halved and finely sliced
6 onions , chopped
4 garlic cloves , finely chopped
2 tablespoons fresh thyme leaves
1 teaspoon brown sugar
150 ml white wine
10 tablespoons double cream
fresh ground black pepper , to taste
1 cup feta cheese , crumbled
1 cup havarti cheese or 1 cup swiss cheese , grated
1/2 cup parmesan cheese , grated
1/4 teaspoon nutmeg
1 1/2 tablespoons almonds or 1 1/2 tablespoons walnuts , coarsely chopped
fresh chives , to garnish

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large skillet over medium heat, melt the butter and add the leeks, onions, garlic, thyme, and brown sugar. Cook for 10 minutes until the leeks and onions are soft.
3.Add the white wine and cook for another 10 minutes until the wine has reduced. Stir in the double cream, black pepper, and feta cheese.
4.Transfer the mixture to a baking dish and sprinkle the havarti or swiss cheese, and parmesan cheese on top. Sprinkle with nutmeg and almonds or walnuts.
5.Bake for 15-20 minutes until golden and bubbly. Serve hot, garnished with fresh chives.
