Ingredients

1 1/2 ounces dried mushrooms
1 ounce butter
2 shallots ( peeled and chopped )
3 garlic cloves ( peeled and finely chopped )
7 ounces mushrooms , thinly sliced
9 ounces chestnut mushrooms , thinly sliced
3 1/2 ounces dry madeira wine
2 sprigs fresh thyme
850 milliliters vegetable stock ( ( 1 1/2 pt )
150 milliliters double cream ( ( 1/4 pt )
8 thin slices French bread
1/2 small camembert cheese ( sliced )
1 leaf from 2 sprigs thyme ( to garnish )

Instructions

1.Soak the dried mushrooms in hot water for 15 minutes, then drain and chop roughly.
2.Melt the butter in a large, heavy-based saucepan. Add the shallots and garlic and cook for a few minutes until softened but not coloured.
3.Add all the mushrooms (including the soaked dried mushrooms), along with the madeira wine and thyme. Cook for 5-10 minutes until the mushrooms have softened.
4.Add the vegetable stock and bring to the boil, then reduce the heat and simmer for 10-15 minutes.
5.Remove the sprigs of thyme and blend the soup until smooth, either using a blender or a hand blender. Add the double cream and stir through.
6.To make the croutes, toast the slices of French bread until golden brown. Add a slice or two of Camembert cheese to each slice, then place under a hot grill until the cheese is melted and bubbling.
7.Serve the soup in bowls, topped with a Camembert croute. Garnish each bowl with a sprig of thyme.
