The Cream of Chestnut Schilcher Soup, also known as Maroni Schilcherrahmsuppe in Austria, is a hearty and warming soup perfect for chilly nights. The soup has a smooth and velvety texture, thanks to the cream and chestnuts that are used to make it. It is a popular dish in Austria, especially during the chestnut season in autumn. The rose wine ( Schilcher ) adds a subtle fruity flavor to the soup, while the cinnamon and cloves give it a cozy and comforting taste. This soup is easy to make, and it is a great way to enjoy the health benefits of chestnuts while indulging in a delicious treat.

Instructions

1.In a large pot, melt the butter over medium heat. Add the chopped shallots and sauté for 2-3 minutes until they are soft and translucent.
2.Add the chopped chestnuts, cinnamon, and ground cloves, and stir for 2-3 minutes.
3.Pour in the rose wine ( Schilcher ) and let it cook for 1-2 minutes until it has reduced slightly.
4.Add the vegetable broth, stir, and bring to a boil. Once boiling, reduce heat to low, and let the soup simmer for 30 minutes.
5.Turn off the heat and let the soup cool slightly. Using an immersion blender or in batches with a regular blender, blend the soup until it is smooth and creamy.
6.Return the soup to the pot and add the cream, stirring until well combined. Reheat the soup over low heat for a few minutes, stirring occasionally.
7.Season with salt and pepper to taste. Serve the soup hot in bowls topped with a dollop of creme fraiche.
