2 pieces imitation crab legs
1/2 package cream cheese , sliced
1 teaspoon minced fresh ginger root

Instructions

1.Rinse the white rice in water until the water runs clear.
2.In a pot, bring the rice and 2 cups of water to a boil. Reduce heat and cover, let it simmer for 18 minutes.
3.In a small saucepan, simmer the rice vinegar and salt until the salt dissolves.
4.Spread the hot cooked rice onto a baking sheet, and sprinkle with the vinegar mixture, stirring to combine.
5.On a rolling mat, place a sheet of nori.
6.Wet your hands with water and place half the rice mixture it in a thin layer over the nori, leaving an inch border at the top.
7.Add sliced cucumber, sliced crab, and thinly sliced cream cheese on top of the rice mixture.
8.Wet the nori border with water using a finger.
9.Tightly roll the sushi using the mat. Repeat with the other sheet.
10.Use a sharp knife to cut into a half-inch serving size pieces.
